New Recipes

I don't know about you, but I get tired of cooking the same old things.  This week we tried ALL new recipes.   This was one of our favorites:  Caprese Grilled Chicken.  Even better, it was super simple to make and pretty healthy, too.   Here is the recipe:
 
CAPRESE GRILLED CHICKEN
 
Ingredients
  • 6 grilled boneless, skinless chicken breasts
  • ¼ cup balsamic vinegar
  • 1 tablespoon butter
  • 6 slices mozzarella cheese
  • 6 slices tomato
  • 6 large basil leaves
 
Instructions
  1. Prepare chicken on the grill. As chicken is cooking, pour balsamic vinegar into sauce pan or skillet and cook until reduced by half. Add in butter and stir with a flat whisk until completely combined. Set aside.
  2. Top chicken with mozzarella cheese, basil leaf, and then tomato slice.
  3. Drizzle with balsamic reduction and serve warm.

 
Andrew is not a fan of tomatoes, but it was easy enough to leave his plain.  We served it with angel hair pasta with a lemon butter sauce, salad and garlic bread.  This one is definitely a keeper!
 
Speaking of keepers....I also recently came across the recipe for a Wendy's frosty.  We decided to try it this week as well.  SUPER EASY.  Mix 1/2 gallon of chocolate milk, can of condensed milk, and 8 oz of cool whip together.  Then pour in your ice cream freezer.  Tastes JUST like a Wendy's Frosty.  Needless to say, it was another hit!
